Quick & Easy Tropical Mochi Bites (Durian or Mango Edition)

Mochi is a chewy, gooey rice cake that makes a delightful dessert after a meal or a perfect companion for afternoon tea. Tropical Mochi Bites, filled with mango or durian, add an exciting twist by infusing fresh, tropical Asian fruits into this traditional treat. Discover and savor the beauty of these vibrant flavors!

Ingredients
  

Mochi Skin
  • 60 g glutinous rice flour 
  • 15 g corn starch (Prepare an extra 20g of cornstarch to prevent sticking while making the mochi.)
  • 15 g sugar
  • 95 g milk
  • 15 g unsalted butter
Mochi Filling
  • 2 pulps frozen durian (Or 2 fresh medium mangoes if you're making mango mochi)
  • 100 ml whipped cream (I use fresh heavy cream for a richer milk flavor.)
  • 10 g sugar (For the whipped cream.)
  • 2.5 g vanilla extract (Optional)

Method
 

Prepare the filling
  1. Take the frozen durian pulp out 1 hour prior to cooking.
  2. Once the durian flesh is soft, use a fork to separate it from the seed. (For mango mochi, dice the mango into small cubes.)
  3. In a separate bowl, combine sugar and vanilla extract with heavy cream, and whip until soft peaks form. Refrigerate the whipped cream for later use.
Prepare the dough
  1. Mix glutinous rice flour, sugar, and milk, and stir until smooth. Then steam the mixture until cooked (about 8–10 minutes).
  2. While the dough is preparing, toast the extra 20g of cornstarch in a frying pan over low to medium heat for 2–3 minutes until it turns light yellow.
  3. Once the dough cools a bit, mix in the butter and knead until it’s fully absorbed. You'll notice the dough becoming nice and stretchy!
Shape the mochi
  1. Dust a clean surface with cooked cornstarch. Once the dough is ready and cooled, divide it into 25g portions and roll each into 0.5 cm (0.2 inches) thick circles.
  2. Flatten each piece with a rolling pin until it is about 0.5 cm (0.2 inches) thick.
Add the filling
  1. Place a mango skin in a small bowl, add whipped cream, and spoon in durian flesh (or mango cubes).
  2. Wrap the dough around the filling and pinch to seal. Cut off any extra dough, which you can use for an additional mochi!
Finish
  1. Place the mochi in cute little muffin cups. Enjoy these delightful bites!

Notes

Tips: Mochi tastes best and is at its freshest when enjoyed immediately. If you can’t finish them the same day, store them in the fridge for up to 2 days to maintain their flavor.
